Recipe Ingredients
2 Ready-to-eat fish packets of Global Tilapia.
3 spoonful of cooking oil
200ml Coconut milk
Salt
1 teaspoon of curry powder
1 large red onion
2 large tomatoes
Tomato paste
Minced garlic
Red capsicum (pili pili hoho)
Green capsicum
Yellow capsicum
Red or green chili (optional)
1 Lemon
How To Prepare
- Wash your onions, tomatoes, capsicums and chili(optional). Chop your onions, tomatoes, chilis
and capsicums separately and in your desired shape. Mince your garlic and put it in a different
bowl. - Add 3spoonful of oil in your heating saucepan. Add your onions to your already heated oil in the
saucepan. Stir till it turns golden brown. Add your minced garlic and stir till it matches the color
of your golden brown onions. Add a spoonful of tomato paste and stir. Then add your chopped
tomatoes, capsicum and chilis(optional) and cook them together. Add a teaspoon of salt. Cover
your saucepan and let your tomatoes cook well. Uncover your saucepan and add the teaspoon
of curry powder to the mixture and stir well. In the mix, add your coconut milk and 1/4 liter of
water. Stir the mixture till it looks uniform. - Add your ready-to-eat tilapia fish to the mixture and let it simmer for 15 minutes on low heat.
Flip your fish just once for both sides to cook in the sauce. Your fish is now ready to serve. - Serve your fish in two broad dishes to maintain its wholeness. Add your rounded-shaped sliced
lemons on top of each plate. - Serve with your desired side dish i.e. Ugali, rice, vegetables
